Choc Moist Cake

Ya Allah, it's been a while!!!! 6 months to be exacts pffft I'm still maid-less, but alhamdulillah, i think i'm getting use to it.

Anyway, since ramai sangat yg bertanya this recipe, i decided to put it up on my blog.

it tasted great!!! simply love it!


Here we go:
Sauce: my cousin back in Tawau - Rose
Make 2kg cake - 9' square pan is just perfect

Ingredients:

Sift
250g cake flour
50g cocoa powder (i used Callabout)
1 tsp baking powder
1/2 tsp soda
1/2 tsp salt

190g unsalted butter - i used SCS
330g caster sugar
1 1/2 tsp vanilla essence
4 eggs - i used 4 large eggs
250 ml chill water

Method: 
Preheat the oven @180 C, 10 mins before baking.
1.In a bowl, sift together all the dry ingredients.
2.Using an electric mixer, beat butter and sugar until smooth.
3.Beat in eggs, one at a time. Add vanilla essence.
4.Add the water and flour mixture gradually, continue beating using low speed until done and fully incorporated. Scrape the sides with a cake spatula.
5.Pour batter in a 9' square cake tin, bake for 45 minutes at 180C. (oven temp may vary)
6.The cake is done when a skewer or toothpick inserted comes out clean.
7.Cool on a wire rack. Add chocolate ganache or top with strawberries.

Choc Fudge
Ingredients
50g cocoa powder - i used callabout
125 ml water
1 C evaporated milk
1 tbsp full cream Milk
200g sugar
1/2 tsp salt
1 tsp vanilla essence
1 egg yolk
60g corn flour
1 tbsp butter

Using double boiler method:

1. Whisk all the ingredients except butter.
2. Cook using double boiler method, stir until the mixture thickens. Remove from stove & stir in butter.
3. Cool before spreading on the cake
* i normally prepare the ganache a day in advance and chill it overnight.

Happy Sunday

Slm, hi sayang-sayangku semua, minggu ni memang minggu yg agak free for me. Orders bole bilang dgn jari mmg slow tsk tsk. Akahir bulan agaknya kan huhu Tapi bila time free ni takde plak mood nak meng-update blog *sigh* Bila busy macam terkejar-kejar nak update sana sini.

Anyway, this is gonna be a quick update, tomorrow genaplah 10tahun my putera sulung. Time really flies kan. Kalau kita umur Abang Jazlan, genap la jugak 11 years of marriage. OMG! Where did the time goes..

Ok nak di jadikan cerita, we went to a bakery trip recently. Nak beli buns for my Bapak Mertua, normally buat sendiri, tapi bila malas mode dtg melanda mmg jgn haraplah nak buat. Oh well, nowadays memang dah jarang pegi bakery. Since dah boleh bake ni (bole la sikit-sikit kan :D) memang dh tak pernah tempah cake for birthdays/anniversaries etc. Semua pun buat sendiri. Alhamdulillah, it save me a bomb! Sometimes yang kita beli ni pun ada yang tak puas hati, kurang kat sini sana. Back to the story, bila dah masuk bakery tu mula lah my boys kemaruk nak beli cakes. Just imagine a slice of cake cost us RM7, kalau buat sendiri tak la semahal tu betul tak? well bukan berkira but i know i can bake better insya Allah :D

Bila dah dok push yours truly ni so i tunaikan lah jugak. Well i just want them to taste it so that next time dah tak mintak dah, soh mama nya buat sendiri je huahuahua. 

Bila dah makan tu ha, baru realised:

Jazlan: Ma, why cake ni taste cream je?
Luqman: Mama buat sometimes tak cantik tapi sedap *huahuahua! kembang kempis kejap kekeek
Me: i told you guys, kalau mama buat lagi sedap (cet! isi bakul angkat sendiri heheeh)

So sempena nak masuk 10tahun ni besok...somebody requested a special cake from me:

Jazlan: Ma, i dont want any fancy cake, bakery one pun tak nak, nak mama buat sendiri tau. I just want a tasty Blueberry Cake...bole? 
Me: GULP! (dalam hati) alamak reti ke nak buat ni? - ok sayang nnt mama bake specially for Abang Jazlan k :D

So tadi dah google kat blog Rima, dah cilok her recipe, hope menjadi lah cake gue k....wish me luck!!!

White Chocolate with Macadamia Muffins

Im still in the middle of finishing my proposal to USCi. But i couldn't wait to share this recipe to you all. I have several other recipes to share, but you know what? this gets first in line. Ok lemme tell ya, I'm not a 'muffin person', but i think this is my kind of muffin. Perfecto! Delicious & very easy!

I brought some sample to UCSi last week and Dr Kit ended up brought them all. Ahaaa....so i bet it must be really good huh? SO apa tunggu lagi, grab your apron now and start baking. I can guarantee it is super simple to make yet very tasty! oh i have to tell ya that i have twisted some of the ingredients and i add streusel topping and these streusel toppings are scrumptious.

Here goes the recipe:

Adapted from The Australian Women's Weekly
Muffins, scones & breads - a priceless gift from my darling sister :D

Ingredients:

2 Cups (300g) self raising flour - i used 2 cups Cake flour + 3tsp baking powder
2/3 (150g) caster sugar
3/4 (140g) white bits - i used a quality chocolate chunk
1/2 cup (75g) chopped , macadamis, toasted - i used almond slices
60g butter, melted - i used unsalted tartura + 1/2 tsp salt
1 egg, lightly beaten
3/4cup milk

Streusel Topping:
1/3 cup (50g) plain flour
2 tbspn brown sugar
30g butter
Sift flour, sugar into a small bowl, rub in butter, roll mixture into a ball, wrap in plastic, freeze until firm enough to grate -  i skipped the freeze method, terus crumble je atas muffin before bake ehe.

Method:

1. Grease 6 hole (3/4 cup/180ml capacity) muffin pan
2. Sift dry ingredients into large bowl, stir in remaining ingredients.
3. Spoon mixture into prepared pan.
4. Crumble the streusel topping over muffins.
5. Bake in moderately hot oven about 25 minutes.

Makes 6 - i used a medium muffin pan, so it makes 15pcs.

What A Great Year To Start

OK, where shall i start? erm this is what happen bila dah lama sgt terbantut nak meng-update blog kan. Despite all the 'drama' bibik cabut lari, found lotsa grey hair lately haih, no year end vacations (how i wish i could have some me time with hb macam KG alangkah...syoknya!) Alhamdulillah i got an offered to supply my products to the UCSi Uni Trg Campus cafe. Tx a zillion to a dear friend (you know who you are :D) for recommending my products to the management. Terima kasih sangat-sangat. The first time i went there, i brought some Congo Bars samples, alhamdulillah Dr Kit the COO loved it! Yay! dengan slang mat salehnya he said " Sedap" .  I was over the moon ha ha.


And after almost a week supplying, i got another offer plak... apakah? ...yeah i got an offer to manage the cafe. How cool is that? Bagai pucuk di cita ulam mendatang!Honestly, at first rasa macam "boleh ke i manage the cafe" "what is gng to happen to my home deli", " sapa nak send & fetch the kids from school" " kids homework" and far so many qs pop up in my mind. Oh well, after had a serious discussion with hb, dalam zaman tengah gawat-gawat ni we think that maybe this is the best for us now..so we decided to take the challenge. Siapa tahu rezeki we all ada kat cafe tu. betul tak? i know it's gonna be a tough one at first, but insya Allah, Allah ada. He knows the best. So now hb & i are working on the menu & price listing, and we'll meet up with KakZ for futher arrangement prior to the agreement & all. Pray Hard, hoping everything is going smooth sailing. 

KakZ told me that after 3 months  the current management taking over the cafe, the guy is still not performing.  Sad...Food in the cafe are very lousy, not varieties, no food serve during  tea time.. and still not meet the expectations.. to the extend almost nasi goreng served everyday for brekkie. Not even a toast ya...i repeat not a even a toast for breakfast. Haiya.. Poor the students, esp the international students. 

So insya Allah, if we are giving the chance, we'll try our best to serve them better. And i know for sure i'll be super busy with the cafe and less time with my lappy. hu hu hu.

We'll update more recipes once i'm done with the menu k...i hope this is not too late to wish you all Happy Belated New Year & Salam Maal Hijrah .

Busy Bee

After more than a week bibik ku lari ...alhamdulilllah i'm coping with all the house chores, my children & orders etc at the same time. Well, for the first few days, it was really tough for me. Really penat! Honestly, from cleaning the dishes, baking stuff urghhh!

But thank God my kids dengan rela hati tolong i. Thanks kiddos! Sampai nak gelak bila my Luqman kata "eee rasa mcm duduk asrama je" lol

Anyway, i'll be busy again this weekend as my closest friend is getting engage, ini betul2 case last minute, but i really hope everything will be smooth sailing...amin..amin...amin....

With the orders in hand, i really hope i can manage to do it all. Just a self reminder, i kena siapkan 1 cake, 7 bekas dulang hantaran and the simple pelamin..plus order yg dah full till sunday...aiyoo sempatkah? i hope so..i better sign out now, besok plan nak bangun awal. nitey nite!
